You do have a right to see data collected about you, under the Data Protection Act. And email, IM conversations, and Web access come under the Interception of Communications, which has fairly tight rules about what your employer can do: http://www.opsi.gov.uk/si/si2000/20002699.htm
IANAL, but in a nutshell, they can really only monitor what's necessary to run their systems (and to prevent crime, etc), or what you've freely consented to have recorded.
Redress is another matter, of course.
